I had some leftover puff pastry from when I made pasties last weekend so I threw it in the freezer and waited until we were having company over this weekend to pop it back out and make something special for an appetizer. My guests absolutely loved these little vegetable pinwheels and they were quick and easy to throw together.
I hate squash. I do. I have hated squash since my preschool teacher Miss Kathy made me eat it with brown sugar and marshmallows when I was three. So naturally, I have been HIGHLY skeptical of the spaghetti squash trend.
But... my friends continue to tell me how good it is; that it doesn't taste like squash... So I acquiesced. I am trying to eat healthier so I decided to try it. And guess what? It is nothing like butternut or other seasonal squash. It is GOOD! And so versatile and healthy and it allows me to still eat all the delicious pasta dishes I love, but without the pasta. My mom has made these since I was a young child and they are my ultimate comfort food. It's essentially meatloaf wrapped in a flakey pastry shell. When I studied abroad in England I would stop in at the Pasty Shop (the "a"is short like "past" not "paste"... Get your mind out of the gutter!☺️) if I was out walking through town over lunch. They had beef and veggie (like these) and a whole variety such as chicken curry and veggie/cheese. Every time I plan to make Pasties I think about trying a new version, but I always come back to wanting those flavors from my childhood. Maybe I will get creative next time. For now, here's the tried and true favorite!
This recipe is packed with vegetables and is warm and comforting on a winter day. I modeled this recipe after the bolognese we ate on a ski trip to Austria when I was 12. There are some flavors you just never forget! There is not much better than sitting on a sunny deck eating a steaming bowl of fresh pasta after a morning skiing in the dense powder of the alps.
