This is the first post in a series I am working on to document the vacuum sealed meals I send with my husband on his annual archery elk hunting trip. These would work great for any backpacker or camper who wants to carry light and nutritionally dense foods that only requires hot water.

These scones are super quick to pull together and perfect on the morning when you have a piece of stone fruit that you want to make something delectable with! I was gifted these beautiful peaches and while I’m enjoying them fresh, ( I love them cold out of the fridge and because they’re perfectly ripe I was able to put them straight into the fridge upon arrival) I wanted to use one in a breakfast item this morning for me and my girls. Cherries or any berries would also be lovely here!

I thought I would share with you my favorite breakfast smoothie recipe! It's creamy and delicious and full of protein to get you through the first part of your day.
I had fixed pesto pasta earlier in the week and had some extra pesto to use up, so why not mix it in with my eggs and veggies to bring some additional flavor to my breakfast plate?!
Incidentally, pesto is very easy to make if you have an abundance of fresh basil. Watch for my recipe this summer when the garden is blooming! Adding an extra egg and two cups of Greek Yogurt give these pancakes a fluffy texture and a good serving of protein. Top with Cinnamon Maple Bananas and your family will never know that they're healthier than your traditional pancake recipe!
