I was looking for something different to do with a roast and discovered that miso is an amazing flavor addition to a pot roast! This one takes some time, even in your Instant Pot, but is SO worth it!

This is a great way to add flavor and freshness to any regular meal you often cook. I am pairing with grilled chicken, rice and green beans tonight but pork or fish would also be a great option.
I am using nectarines that I had already available but you certainly could use peaches or mango or experiment with other fruits. I hope you enjoy and this inspires you to get creative! Tagine is a North African cooking method which perfectly roasts vegetables and meats to succulent goodness. They’re becoming more common to find at cooking stores, now sold at William Sonoma and even Amazon.
Care of your Tagine is important. When you get your tagine be sure to soak it immersed in water for at least 24 hours (also soak if you have not used it in over six months). Then coat the inside in a good clean cooking oil and bake it at 250 F for a couple of hours. Always put your Tagine in a cold oven and let it come up to temperature. Now you’re ready! Two takes on a comfort food favorite, when I make lasagna I make one traditional version for my husband and kiddos and one with layers of spaghetti squash for my healthier version. Tough to tell which is which until you cut into it!
Some nights we just need something quick and easy. But it doesn't have to be junk. We have all heard that the more colors we eat the better... So tonight we made Rainbow Tacos! The girls loved building their own and I love that they got a balanced and filling meal full of delicious veggies.
If you are looking for a different spin on dinner, give this easy enchilada bake a try! It's mild enough for the kids and packed with veggies too!
I replaced the noodles with layers of roasted zucchini slices and loved the intense flavor that the pesto and feta brought to this low carb, family friendly dish!
My mom has made these since I was a young child and they are my ultimate comfort food. It's essentially meatloaf wrapped in a flakey pastry shell. When I studied abroad in England I would stop in at the Pasty Shop (the "a"is short like "past" not "paste"... Get your mind out of the gutter!☺️) if I was out walking through town over lunch. They had beef and veggie (like these) and a whole variety such as chicken curry and veggie/cheese. Every time I plan to make Pasties I think about trying a new version, but I always come back to wanting those flavors from my childhood. Maybe I will get creative next time. For now, here's the tried and true favorite!
This recipe is packed with vegetables and is warm and comforting on a winter day. I modeled this recipe after the bolognese we ate on a ski trip to Austria when I was 12. There are some flavors you just never forget! There is not much better than sitting on a sunny deck eating a steaming bowl of fresh pasta after a morning skiing in the dense powder of the alps. I often make this for company or just a chilly Sunday night, the sauce is even better the second day as leftovers! What you'll need:Like most of my favorite recipes, I modeled this recipe after an adventure. When I was 22 I spent a couple of weeks with my dear friend from England at her family home (and Turkey farm!) in Kenya. This shepherd's pie was like none I had ever had before and it was burned into my brain. So Rosemary, here is my attempt!
This delicious, hearty and comforting meal is sure to please both little ones and adults alike. Perfect for a weekend dinner with friends, or make ahead for an easy meal or leftovers during the week. When making a fondue dinner, the meat course takes probably the least amount of prep-work. Boil some small potatoes, roast some mushroom caps in the oven with a little olive oil, salt and pepper, and cut steak into small 1"-2" cubes. While you could use tenderloin, I opted for a slightly sturdier cut of prime beef.
This delicious and easy recipe is sure to please the whole family! Kids love the little meatballs and adults love the hearty comforting flavors and the nutritional benefits from all the veggies.
Need a quick idea for dinner? If you keep some veggies and a couple of stir-fry ingredients in your fridge a quick Stirfy can be your answer in under 30 minutes.
Don't worry, no porcupines harmed here! These delicious meatballs get their name from the rice and peppers that stick out of them.
They're a favorite of my hubby's since his childhood and and our girls love them too. They're a warm comfort food that is easy to throw together with simple ingredients. Lasagna is an easy classic that to many new cooks seems more daunting than it really is. This one takes about 20 mins to put together and then bakes for 45 mins or so. Easy enough, even for a weeknight!
You can also make ahead and put it in the fridge. Sometimes I will make one on Sunday and then all I have to do is bake it any night that week. Also a great one to make in a disposable foil pan and give to a friend who just had surgery or send with the guys up to deercamp. |
