This fall we got a bread machine and recently discovered that it makes great pizza dough! Below is the recipe we use, just adding everything to the dough pan in the order listed.
First I want to say that I am no expert in Indian cooking, but because I love the food I try my best to recreate the flavors in some of the dishes I love! Here is an easy and healthy take on Dal made with yellow split-peas. If you are an Indian cooking expert and have any suggestions for how to make this dish even better let me know!
Two takes on a comfort food favorite, when I make lasagna I make one traditional version for my husband and kiddos and one with layers of spaghetti squash for my healthier version. Tough to tell which is which until you cut into it!
Just a quick reminder that breakfast for dinner can be a healthy and quick meal when you combine garden goodies with fresh eggs! We even had homemade oatmeal bread thanks to our new bread machine, but any slice of toast you love will do!
With the size and number of zucchini I have coming out of our garden, I am planning this post to be the first in a series showing just how I plan to use them all!
An herby twist on a crunchy classic. Baked or pan-fried, these are sure to please the whole family!
Some nights we just need something quick and easy. But it doesn't have to be junk. We have all heard that the more colors we eat the better... So tonight we made Rainbow Tacos! The girls loved building their own and I love that they got a balanced and filling meal full of delicious veggies.
This is a twenty minute meal from start to finish. It's a Tuesday night and I got home at 6:00, started cooking at 6:10 and we were sitting down at 6:30 to eat. I am not pulling your leg. Doesn't it look fantastic? (It WAS!!)
We call this pasta bar based on a restaurant we used to frequent (I worked there when I met my hubby) which had a pasta bar and they would make your pasta in front of you. This is the recipe I would always make and now I continue to make it at home. My kids love it and I love that it's filled with great healthy protein and veggies in addition to the noodles that they love.
I had fixed pesto pasta earlier in the week and had some extra pesto to use up, so why not mix it in with my eggs and veggies to bring some additional flavor to my breakfast plate?!
Incidentally, pesto is very easy to make if you have an abundance of fresh basil. Watch for my recipe this summer when the garden is blooming! If you are looking for a different spin on dinner, give this easy enchilada bake a try! It's mild enough for the kids and packed with veggies too!
I replaced the noodles with layers of roasted zucchini slices and loved the intense flavor that the pesto and feta brought to this low carb, family friendly dish!
I got home with a half an hour to make dinner, a fridge full of fresh veggies and a pound of ground beef. Rather than make a quick and greasy traditional pasta sauce full of sugar from a jarred sauce, I thought I would try to make a veggie-packed quick home-made sauce and my kids LOVED it! Magic sauce was born!
I hate squash. I do. I have hated squash since my preschool teacher Miss Kathy made me eat it with brown sugar and marshmallows when I was three. So naturally, I have been HIGHLY skeptical of the spaghetti squash trend.
But... my friends continue to tell me how good it is; that it doesn't taste like squash... So I acquiesced. I am trying to eat healthier so I decided to try it. And guess what? It is nothing like butternut or other seasonal squash. It is GOOD! And so versatile and healthy and it allows me to still eat all the delicious pasta dishes I love, but without the pasta. This recipe is packed with vegetables and is warm and comforting on a winter day. I modeled this recipe after the bolognese we ate on a ski trip to Austria when I was 12. There are some flavors you just never forget! There is not much better than sitting on a sunny deck eating a steaming bowl of fresh pasta after a morning skiing in the dense powder of the alps. I often make this for company or just a chilly Sunday night, the sauce is even better the second day as leftovers! What you'll need: I modeled this fresh broth-based soup after one we reveled over on our honeymoon in San José deal Cabo. The best part? It's ready in about 20 minutes! The perfect weeknight meal.
This hearty and healthy soup hits all the notes of the thick and creamy wild rice soup I grew up on. But there is one big difference. Mine has no cream, whole milk or roux. Full of protein and veggies, it is actually healthy!
Like most of my favorite recipes, I modeled this recipe after an adventure. When I was 22 I spent a couple of weeks with my dear friend from England at her family home (and Turkey farm!) in Kenya. This shepherd's pie was like none I had ever had before and it was burned into my brain. So Rosemary, here is my attempt!
This delicious, hearty and comforting meal is sure to please both little ones and adults alike. Perfect for a weekend dinner with friends, or make ahead for an easy meal or leftovers during the week. |
