Sometimes all it takes is thinking about something simple a little differently and you have an easy, fresh, light summer meal that everyone loves.
I can't believe I haven't been making more quiches! This was so easy and absolutely delicious.
Some nights we just need something quick and easy. But it doesn't have to be junk. We have all heard that the more colors we eat the better... So tonight we made Rainbow Tacos! The girls loved building their own and I love that they got a balanced and filling meal full of delicious veggies.
We call this pasta bar based on a restaurant we used to frequent (I worked there when I met my hubby) which had a pasta bar and they would make your pasta in front of you. This is the recipe I would always make and now I continue to make it at home. My kids love it and I love that it's filled with great healthy protein and veggies in addition to the noodles that they love.
I had fixed pesto pasta earlier in the week and had some extra pesto to use up, so why not mix it in with my eggs and veggies to bring some additional flavor to my breakfast plate?!
Incidentally, pesto is very easy to make if you have an abundance of fresh basil. Watch for my recipe this summer when the garden is blooming! If you have some leftover fresh ingredients from your Cinco de Mayo festivities, throw them together with a few hard boiled eggs for a fresh and healthy lunch!
So quick and easy you can make it by the pool! All you need is a knife and a few fresh ingredients.
I replaced the noodles with layers of roasted zucchini slices and loved the intense flavor that the pesto and feta brought to this low carb, family friendly dish!
I got home with a half an hour to make dinner, a fridge full of fresh veggies and a pound of ground beef. Rather than make a quick and greasy traditional pasta sauce full of sugar from a jarred sauce, I thought I would try to make a veggie-packed quick home-made sauce and my kids LOVED it! Magic sauce was born!

I hate squash. I do. I have hated squash since my preschool teacher Miss Kathy made me eat it with brown sugar and marshmallows when I was three. So naturally, I have been HIGHLY skeptical of the spaghetti squash trend.
But... my friends continue to tell me how good it is; that it doesn't taste like squash... So I acquiesced. I am trying to eat healthier so I decided to try it. And guess what? It is nothing like butternut or other seasonal squash. It is GOOD! And so versatile and healthy and it allows me to still eat all the delicious pasta dishes I love, but without the pasta. Like most of my favorite recipes, I modeled this recipe after an adventure. When I was 22 I spent a couple of weeks with my dear friend from England at her family home (and Turkey farm!) in Kenya. This shepherd's pie was like none I had ever had before and it was burned into my brain. So Rosemary, here is my attempt!
This delicious, hearty and comforting meal is sure to please both little ones and adults alike. Perfect for a weekend dinner with friends, or make ahead for an easy meal or leftovers during the week. I made this today to have a warm and healthy soup for lunch this week, but it smells so good, my family might vote to eat it for dinner!
When making a fondue dinner, the meat course takes probably the least amount of prep-work. Boil some small potatoes, roast some mushroom caps in the oven with a little olive oil, salt and pepper, and cut steak into small 1"-2" cubes. While you could use tenderloin, I opted for a slightly sturdier cut of prime beef.
We decided to do fondue for New Year's this year and it was a hit! We did all three courses, so I will start with the cheese course in this blog. Clearly the most important course!
